puli inji (sweet & sour ginger pickle)





SUMMARY

  • Course: Onasadhya pickle
  • Cuisine: Kerala

  • Total Time: 25 minutes 

INGREDIENTS

  •  Chopped ginger....1cup 
  • Chopped green chilly....9nos 
  • Curry leaves ....few 
  • Tamarind..... big lemon size 
  • Chilly powdder....1tsp 
  • Turmeric powder....1/4tsp 
  •  Water......11/2cup
  • Hing.....small piece
  •  Jaggery cubes.....11/2
  •  Coconut oil....3tsps

 FOR SEASONING  

  •  Curry leaves..... few
  •  Mustard seed....1/2tsp 
  • Red chilly....3nos
  • Coconut oil....1tsp 

STEPS

  1.  Soak tamarind in water.
  2.  Heat coconut oil in a pan add ginger, green chillies, and curry leaves, fry them until golden brown. 
  3. Pour tamarind juice into it and mix well. 
  4. Add jaggery to it , keep on fire till its boil. 
  5. Add chilly powder, turmeric powder and hing, stir continuously till it become thick.
  6. When it is done seasoning it.
