Chakka ice cream without egg (Home made jack fruit ice cream)

INGREDIENTS:

  • Jack fruit (deseed).....2cups
  • Whipping cream .......500ml
  • Full cream milk .........1/4cup
  • Condensed milk .........3/4cup
  • Milk powder ...............4tbsp
  • Vanilla essence............2drops(optional)
FOR PRALINE:

  • Sugar ...........................3tbsp
  • Crushed cashew............12nos

STEPS:

  1. To make praline: heat a pan, add sugar, when it is melt and light brown add crushed cashew, switch off the flame, stir for few seconds, then transfer into butter paper and allow to cool, crush them and keep aside.
  2. Take a blender add jack fruit,milk,condensed milk,milk powder and vanilla essence, then  make a smooth paste and keep aside.
  3. In a mixing bowl add whipping cream and whisk it until cream is thick and to stiff peaks.
  4. Now mix the whipping cream into jack fruit paste and slowly fold it until mix well., add half of praline and fold again.
  5. Transfer this ice cream mix into a plastic container, cover with cling wrapper to prevent ice crystal formation and finally cover with lid, keep in freezer for two hours.
  6. After two hours mix gently the ice cream again, cover it tightly and keep in the freezer for 6 to 7 hours.
  7. Ice cream is ready,  sprinkle the praline over ice cream scoop and serve it.......Enjoy!!!!! 

TIPS:

  • Instead of whipping cream can be used thick cream or double cream.
