Fish majboos (Arabic rice with fish)

Today's recipe is a  Arabic delicacy, It is simple and delicious, I made with king fish, it can be prepare also with Sheri or Hamour.




SUMMARY:

INGREDIENTS:

  • Rice(long grain.)..11/2 cup
  • Oil ......................3tbsp
  • Cinnamon stick...2small 
  • Cloves.................6nos
  • Cardamom pods..3nos
  • Dried lemon.........1nos
  • Cumin seed ........1/4tsp
  • Onion  ................1no
  • Ginger garlic paste.1tbsp
  • Tomato ..................1no
  • Tomato paste..........2tbsp
  • Green chilly ...........4no
  • Warm water ...........3cup
  • Arabic masala ........1tbsp
  • Turmeric powder....1/4tsp
  • Pepper powder ......1/4tsp
  • Salt ........................to taste

FOR MARINATION:

  • Arabic masala ..........1tbsp
  • Turmeric powder.......1/2tsp
  • Salt ............................as required
  • Olive oil ......................1tbsp

STEPS:

  1. Clean and wash the fish,pat dry and marinate the fish with above mentioned ingredients,keep aside for 20 minutes.
  2. Wash the rice and soak it for 10 minutes and drain it.
  3. Heat oil in a pan,add marinated fish, shallow fry and keep aside.
  4. Heat the same oil in a thick bottom vessel, add whole masalas and sliced onion, stir for 2 minutes.
  5. Now add ginger garlic paste,salt, green chillies, dried lemon (cut into two pieces)  and tomato, saute it for few minutes.
  6. When tomato is done add tomato paste,pepper powder and Arabic masala, stir for few seconds, then add warm water.
  7. When it is boiled, add rice, add crushed fish ( take one piece of fried fish and crush it) stir well and cover with a air tight lid,cook until the rice is almost done.
  8. Now layer the fried fish on top of the rice and close the lid, cook further 5 minutes in slow flame, switch off the flame and leave it 30 minutes.
  9. After 30 minutes open the lid and take out all the fish from the rice, mix well the rice, keep it open for 5 minutes to evaporate remaining water from the rice.
  10. Take a serving dish and arrange fish on top of rice, serve warm and enjoy.....!!!!!!!
