Ada pradhaman (rice pasta dessert) Payasam

This is a traditional dessert (payasam) of Kerala, especially in festival of Onam, Its very tasty and delicious.

 INGREDIENTS

  •  Rice ada.................200grams
  •  Jaggery...................400grams
  •  Ghee.......................4tbsp
  •  Thin coconut milk..3cups
  •  Thick coconut milk.2cups
  • Cashewnut...............50grams
  •  Raisin......................25grams
  •  Cardamom powder..1/2tsp
  •  Water......................as required

 STEPS

  1.  Cook the Ada for 10 minutes with required water, once it is done,completely drain the water and rinse 2 or 3 times with cold water( this is to prevent the Ada from sticking each other). 
  2. Melt Jaggery with half cup of water and keep aside.
  3. Heat a thick vessel (uruly), pour 2 tabsp ghee and fry cashewnuts and raisins, keep aside.
  4.  In the same vessel add prepared Ada and stir for 3 minutes, then add melted jaggery and stir until it is thick, then add remaining ghee and mix well.
  5.  Add thin coconut milk, keep stir until it is slightly thick,then add thick coconut milk and mix well. 
  6. Turn off the flame before start to boil, then add cardamom, cashew and raisins.
  7.  Delicious Ada pradhaman is ready to enjoy.
