Pathiri is a traditional and authentic bread item of kerala Muslim cuisine.It is known in different names, like nice pathiri, ari pathiri, Malabar pathiri etc. Its usually make in special occasions especially in Ramadan. Normally serve with chicken,mutton, beef curries or coconut milk. There are many varieties of pathiris in Malabar Muslim cuisine,nei pathiri, poricha pathiri, meen pathiri,erachi pathiri, kai pathiri, pathal etc.

INGREDIENTS:
- Fine rice flour........4cup
- Water......................4cup
- Salt.........................to taste
- Rice flour...............1/2 cup (for rolling)
STEPS:
- Boil 4 cup of water in a sauce pan adding salt.
- When it is boil, reduce the flame, add rice flour and mix it evenly with a spoon,.Keep it covered for 3 minutes,Switch off the flame.
- When the dough still warm, knead it well with your hands until dough is soft and smooth, if you feel hot then dip your hands in water while kneading.
- Make lemon sized balls from the kneaded dough.
- Flatten the balls to get thin round shape (refer photo)using chapatti press by spreading rice flour over it.
- Sprinkle little rice flour on rolling board, then roll like thin chapati round shape.
- Heat a flat nonstick pan on medium flame, place the pathiri on it, wait for few seconds then flip over, this time wait for little more time and flip over again. when it is puffs up remove pathiri from the pan, make sure that the pathiris are not getting brown.
- Serve with coconut milk and curries.
