Mutta muringa ela thoran(egg with drum stick leaves stir fry)

A healthy stir fry.Drum stick leaves are highly nutritious,we can prepare different varieties of recipes with drum stick leaves.If you don't get drum stick leaves,you can use instead of any spinach.

INGREDIENTS:

  • Muringa ela (drum stick leaves)......2 cup
  • Egg ..................................................2 nos
  • Shallots.............................................12 nos
  • Turmeric ...........................................1 pinch
  • Green chilly ......................................2 nos
  • Curry leaves ......................................1 spring
  • Salt ....................................................as requiered
  • Oil .....................................................1 tbsp

STEPS:

  1. Pluck each leaves from stem and remove the yellow leaves.
  2. Wash the leaves well and drain it using a colander.
  3. Heat oil in a pan add shallots,green chillies,and curry leaves, saute it a minute.
  4. Then add drum stick leaves,salt and a pinch of turmeric powder, keep stirring.
  5. When it is half cook add eggs and stir well for 3 minutes.
  6. Now thoran is ready.Enjoy with rice.
