Vegetable stew




SUMMARY:

INGREDIENTS:

  • Boiled potato..........2medium
  • Onion.....................1large
  • Green chilly............3nos
  • Carrot.....................1nos
  • Turmeric powder....1/2tsp
  • Mustard seed..........1/2tsp
  • Curry leaves...........1sprig
  • Cardamom pod.......3nos
  • Cloves.....................3nos
  • Cinnamon stick.......1small
  • Salt.........................to taste
  • Coconut oil..............1tbsp
  • Thin coconut milk....11/2cup
  • Thick coconut milk....3/4cup

STEPS:

  1. Peel  carrot, cut in to cubes and wash well.
  2. Cook  carrot, sliced onion, green chilly, salt and turmeric powder with thin coconut milk.
  3. When it is half cook, add boiled potato cubes and cook again until it is done. Then   smash slightly, and add thick coconut milk, combine well.Switch off the flame.
  4. Heat oil in a pan, add whole masalas mustard seed,when it is crackled add curry leaves, stir few seconds, then pour in to the veg stew.
  5. Vegetable stew is ready, serve warm with chapati or poori......Enjoy.!!!!!!!!
