Brinjal fritters/eggplant fritters (Ifthar recipe # 37)


SUMMARY:

INGREDIENTS:

  • Egg plant.(brinjal).........1large
  • Oil..................................for deep fry

FOR BATTER:

  • Chickpea flour(besan)......1cup
  • All purpose flour.............1/2cup
  • Rice powder......................2tbsp
  • Salt...................................to taste
  • Red chilly powder............1/4tsp
  • Baking powder...................2pinch
  • Ginger garlic paste.............1/2tsp
  • Chopped cilantro.................2tbsp
  • Egg ......................................1no
  • Water....................................as require


STEPS:

  1. Wash  the eggplant,cut into  thin round slices and soak in salted water for 10minutes.Rinse&pat dry with paper towel.
  2. Make a smooth,thick batter with above mentioned batter ingredients (without any lumps).
  3. Heat oil in a wok and dip each slices in batter(well coated) and deep fry it until golden brown.
  4. Remove from oil and place it on paper towel to absorb excess oil.
  5. Delicious brinjal fritters are ready to serve.
  6. Enjoy!!!!!!!!!!.
