- Egg plant.(brinjal).........1large
- Oil..................................for deep fry

- Chickpea flour(besan)......1cup
- All purpose flour.............1/2cup
- Rice powder......................2tbsp
- Salt...................................to taste
- Red chilly powder............1/4tsp
- Baking powder...................2pinch
- Ginger garlic paste.............1/2tsp
- Chopped cilantro.................2tbsp
- Egg ......................................1no
- Water....................................as require
STEPS:
- Wash the eggplant,cut into thin round slices and soak in salted water for 10minutes.Rinse&pat dry with paper towel.
- Make a smooth,thick batter with above mentioned batter ingredients (without any lumps).
- Heat oil in a wok and dip each slices in batter(well coated) and deep fry it until golden brown.
- Remove from oil and place it on paper towel to absorb excess oil.
- Delicious brinjal fritters are ready to serve.
