INGREDIENTS:
- Kaipakka/pavakka .......2nos
- Chopped green chilly...5nos
- Chopped ginger ...........2tbsp
- Chopped garlic.............2tbsp
- Curry leaves.................3springs
- Mustard seeds...............1/4tsp
- Sesame/gingelly oil.......3tbsp
- Tamarind pulp...............a lemon size
- Chilly powder.................11/2tsp
- Turmeric powder ............1/4tsp
- Salt..................................to taste
- Sugar ...............................2pinch
- Vinegar.............................11/2tbsp
- Hot water.........................as required
FOR DRY ROAST:
- Fenugreek seeds................3/4tsp
- Mustard seeds ..................1tsp
STEPS:
- Wash the bitter gourd and cut into thin square piece.
- Soak tamarind in warm water and squeeze it.keep aside.
- Dry roast mustard and fenugreek,let it cool grind them fine powder.
- Heat oil in a wok,splutter mustard seeds then add green chilly,ginger,garlic and curry leaves saute until them golden brown.
- Reduce the flame then add chilly powder and turmeric powder saute few second then add tamarind juice,salt,vinegar,sugar and required hot water mix well and allow to boil for 4to 5 minutes.
- Now add bitter gourd pieces stir well.When it is start to boil switch off the flame.
- When it is cool add ground powder mix well.Nadan kaipakka achar is ready.
- You can use it after few hours or next day.Enjoy !!!!!!!!! with rice or rice porridge.
NOTE:If you are using this pickle more than a week keep refrigerator.
