INGREDIENTS:
- Ripe pineapple.......250g without skin
- Golden colour jaggery.70 or 85grams (depends on the sweetness of pineapple)
- Sago........................2tbsps
- Thin coconut milk...3cups
- Thick coconut milk..11/4cup
- Cardamom powder...1/2tsp
- Salt ...........................1pinch
- Ghee .........................11/2tbsp
- Cashew nut................12nos
- Raisins........................12nos
STEPS:
- Grind the pineapple to make a coarse paste.
- Melt jaggery with 3tbsp water and keep aside.
- Cook sago with 1cup of water,once it is done drain and keep aside.
- In a heavy bottom pan,add ghee and ground pineapple, saute until it is done.
- Once the pineapple cooked well and all the water is evaporated add melted jaggery, saute till it become soft.
- Now add thin coconut milk stir occasionally until payasam start to thicken.Then add sago and a pinch of salt cook few minutes.
- Then add thick coconut milk,cardamom powder and mix well,stir slowly another 3 to 4 minutes.
- Heat 1 tsp ghee in a pan fry cashew and raisins and pour it over the payasam.
- Delicious pineapple payasam is ready......Enjoy!!!!!!!!!
NOTE:
- You can add 1drop of yellow colour if u want more colour.
- If you like to bite pineapple, you can chop them and cook with little water and saute in ghee.
