Raw plantain&carrot stir fry(pacha kayayum carrotum mezhukkupuratti)

Today i am sharing raw plantain &carrot mezhukkupuratti.It is another simple and delicious kerala(south India) recipe which means the plantain &carrots are cotted with coconut oil.Try this wonderful recipe and send me feedback.

INGREDIENTS:

  • Raw plantain.......3nos
  • Carrot..................2nos
  • Green chilly.........3nos slit
  • Salt......................to taste
  • Water...................as required
  • Coconut oil..........11/2tbsps
  • Chopped shallots.5nos
  • Curry leaves.........2springs

STEPS:

  1. Trim the edges of the plantain, slightly peel the thick outer skin and cut  into small cubes.Soak them in water for few minutes then wash well.
  2. Peel the carrots, cut into small cubes and wash well.
  3. In  a vessel add plantain and carrot cubes along with salt,green chilly and little water,cover and cook for 6-7minutes.
  4. When the vegetable turn soft,uncover and keep on flame until the water evaporates completely.
  5. Heat oil in a pan add chopped shallots and curry leaves and saute until golden brown.Now add cooked vegetables into it and mix well.
  6. Tasty mezhukkupuratti is ready! serve warm with rice and Enjoy!!!!!!!!!!!!!!!!.

Healthy wheat flour string hoppers(healthy gothambu idiyappam)

Hi friends,
Today  i am sharing a healthy recipe,wheat string hoppers(gothambu idiyappam).It is very delicious,healthy and easy to make.


SUMMARY:

INGREDIENTS:

  • Wheat flour...........1cup
  • boiling water.........1cup
  • Salt........................to taste
  • Grated coconut......4tbsps
  • Grated carrot..........4tbsps
  • Sesame oil..............1/2tsp

STEPS:

  1. Take wheat flour in a pan,and  dry roast in medium flame until it gets nice aroma then add salt mix well and switch off the flame.
  2. Now  pour boiling water over it  and mix well with a  wooden spatula until it comes together as a dough.Sprinkle sesame oil over it, cover the pan with a lid and let it rest for 10  minutes.
  3. In a bowl add grated coconut and carrot mix well and keep aside.
  4. Lightly grease the idli mould with  oil,then put 1 tbsp of  coconut carrot mixture in to it.
  5. Take idiyappam maker,fill the dough and squeeze it  on  idli mould  and steam for 10-12 minutes.
  6. Wheat idiyappam is ready,serve with coconut milk or veg/non veg  curries.
  7. Enjoy.!!!!!!!!!!!!!!!!!!!!!!!!.

Nadan kappa vevichathu/kappa puzhukku(Seasoned mashed tapioca with grated coconut)

Hi friends,
Today  i am sharing a traditional kerala dish with tapioca/kappa/cassava.It is one of the most popular dish in kerala.This delicious dish goes well with fish/meen curry.

SUMMARY:

INGREDIENTS:

  • Tapioca(kappa)..1kg
  • Grated coconut..11/2cup
  • Shallots..............8nos
  • Green chilly.......4nos
  • Garlic cloves.....3nos
  • Cumin seeds......1/4tsp
  • Turmeric powder.1/2tsp
  • Salt ......................to taste
  • Water....................as required

FOR SEASONING:

  • Coconut oil..........1tbsp
  • Mustard seeds......1/2tsp
  • Dry chilly..............3nos
  • Curry leaves..........2strings

STEPS:

  1. Peel the tapioca,cut into small cubes and wash well.
  2. In a vessel add  cleaned tapioca and enough water (the water level should be 2-3 inches higher than tapioca) then cook uncovered and allow to boil.
  3. When the water boils,remove from fire and drain the water and again add same amount of water, salt and turmeric powder then cook until it done.
  4. Once it cooked, drain off the  water  using a colander and keep it aside.
  5. Crush cumin,shallots,green chilly and garlic together and keep aside.
  6. In a vessel add cooked tapioca, crushed mix and grated coconut, combine well  then cover and cook on low flame until water evaporates well. 
  7. Now mash tapioca with a wooden spatula and cook  2more minutes then remove from heat.
  8. Seasoning it with above mentioned ingredients,tapioca vevichathu is ready!.
  9. Serve warm with nadan fish curry..Enjoy.!!!!!!!!!!!!!!!!!!!!!!!!!!.

Vegetable hakka noodles

Hi friends,
Today i am sharing veg hakka noodles.It is a delicious,flavorful dish and popular with street vendors. Hakka noodles  usually served as starters or even for main course.

INGREDIENTS:

  • Noodles.................150g
  • Garlic cloves.........3minced
  • French beans.........5nos thinly sliced
  • Capsicum (bell pepper).1cup use different colour thinly sliced
  • Cabbage...shredded.1/2cup
  • Julienned carrot.....1/2cup
  • Copped onion.........1small
  • Spring onion..........3tbsp finely chopped
  • Soy sauce...............2tbsp
  • Chilly sauce...........1tsp
  • White vinegar........1/2tsp
  • Pepper powder........1/4tsp
  • Salt..........................to taste
  • Sesame oil............2-3tbsp
  • Water.....................as required

STEPS:

  1. Boil 6 cup of water in a sauce pan add oil and salt,stir then add noodles and cook until it done.
  2. Drain the cooked noodles in a colander,then rinse them under cold running water sprinkle some oil,mix thoroughly so that the noodles don't stick to each other .Keep aside.
  3. Heat oil in a wok or wide pan in medium high heat  and add chopped garlic,onion,  spring onion white and beans saute for few seconds.
  4. Now add carrot,cabbage and bell pepper  saute for 2minutes,do not over cook the vegetables.(vegetable should have some crunch).
  5. Add noodles,salt soy sauce, pepper powder,vinegar and chilly sauce,toss them together for a minute.
  6. So our delicious veg hakka noodles are ready.Garnish with chopped spring onion green and serve warm.Enjoy.!!!!!!!!!!!!!!!!.

STEPS:

  1. Crush shallots and cumin seeds and keep aside.
  2. In a sauce pan heat water with salt and ghee.When it boils,reduce the flame add rice flour and mix it evenly with a spoon,keep it covered for a minute switch off the flame.
  3. Add crushed shallot mixture and grated coconut to the dough mix well.
  4. When the dough still warm,knead it well with your hands by applying water until to get a smooth dough.
  5. Divide the dough to 2 balls,take each ball and roll into thick large circle(pathiri),cut it in to manysmall pathiries by using a glass or cutter.
  6. Heat oil in a wok and deep fry these prepared small pathiries until slight  brown on both sides.
  7. Serve warm with chicken curry or  any non veg curry of your choice.

STEPS:

  1. Wash the vendakka(okra,lady's finger)very well under running water,drain and wipe with a kitchen tissue.
  2. Trim both the ends each of them then cut into thin round pieces.
  3. Heat oil in a pan add sliced onion,green chilly and curry leaves,saute  for few seconds.
  4. Now add okra stir couple of minutes secon, then add salt(keep stirring) and cook for 8to 10 minutes  so that the okra gets rid of its sliminess.
  5. Then add grated coconut stir and fry 2 more minutes.Thoran is ready!
  6. Serve with rice and Enjoy..!!!!!!!!!!!!!!.

  • Chopped cilantro.....2tbsp
  • Coriander powder...2tbsps

FOR CRUSH:


  • Pepper corn.............8nos
  • Fennel seed.............1tsp

STEPS:

  1. Cut the chicken into medium  pieces,wash well and drain off the water.
  2. Crush above mentioned ingredients and keep aside.
  3. Heat oil in a pot add fenugreek seed,onion,green chilly,curry leaves and little salt, saute well until the onion become light golden brown.
  4. Then add ginger garlic paste stir for a minute, now add tomato and remaining salt, just stir then cover the pot with lid and allow it to cook for 4 to5minutes in low flame.
  5. When it is cooked well, add chicken pieces and saute until water coming out from the chicken.
  6. Now add coriander powder,chilly powder,turmeric powder and garam masala, saute again for couple of minutes in low flame.
  7. Then add hot water and stir well, now add curry leaves,chopped cilantro and crushed spices on top of curry,cover the pot with lid and cook in low flame until it is done or the gravy become medium thick and oil will be coming out.
  8. Delicious chicken curry is ready! serve warm with appam,idiyappam pathiri,porota,chappati etc...Enjoy...!!!!!!!!!.

  • Chilled milk..................as required

STEPS:

  1. In a bowl add custard powder and 1/4 cup of cold milk then mix well to make a smooth paste  with out any lumps.
  2. Heat remaining milk  and sugar in a sauce pan,when it  boil reduce the flame pour custard mixture  into it  stirring continuously until it thicken.
  3. Once it is done remove from heat,let it cool and keep refrigerator for 30minutes.
  4. In a blender add cooked custard,chilled milk,chopped mango,vanilla essence  and condensed milk  then blend it until smooth and creamy.Tasty and yummy custard milk shake is ready!
  5. Pour in serving glasses,garnish with chopped nuts and serve.Enjoy!!!!!!!!!!!.

FOR BATTER:
  • All purpose flour(maida).1cup
  • Rice flour........................1/4cup
  • Yogurt..............................3/4cup

STEPS:
  1. Make a  batter ( should be vada batter consistency) with above mentioned ingredients, then add chopped cilantro,green chilly,ginger and cumin seeds, mix well and keep aside for 15 to 20 minutes or until batter will be light and fluffy.
  2. Heat oil in a wok  on medium flame, now dip your finger in water and scoop out the batter (wet hand prevent batter from sticking to hand) slowly push the batter from thumb to drop the batter into hot oil and fry until golden brown.
  3. Drain off bondas with paper  towel ( make sure the bondas should be crispy outside and soft inside).
  4. Delicious Mysore bonda is ready! serve warm with coconut chutney or ketchup...Enjoy.....!!!!

Al faham chicken (Chicken charcoal)

Hi friends,
Today i am sharing another Arabian delicacy,Al faham chicken/Arabian grilled chicken.Al faham chicken is very popular recipe  in middle east. It is prepared with Arabian spice mix (which is called as Bezar) and barbecue in a charcoal grill or in oven.

                                           സ്വാദൂറും അറേബ്യൻ  ചിക്കൻ ചാർക്കോൾ 




SUMMARY:

  • Cooking time.............45minutes

INGREDIENTS:

  • Chicken with skin.......1no (or whole legs.....6nos)
  • Lemon juice................1lemon
  • Ginger juice.................2tbsp
  • Salt...............................to taste
  • Olive oil.......................2tbsp

FOR SPICES:

  • Coriander powder..........1tsp
  • Chilly powder................1tbsp
  • Turmeric powder............1/2tsp
  • Garam masala powder....1/2tsp
  • Pepper corn.....................1tbsp
  • Cumin seed......................1tsp
  • Fennel seed ......................11/2tsp
  • Green cardamom................5nos
  • Cloves................................4nos

VEGETABLES:

  • Onion ................................1/2
  • Shallots...............................10 nos
  • Tomato................................1small
  • Green chilly.........................2 nos
  • Ginger..................................small piece
  • Garlic cloves........................4nos
  • Capsicum..............................1/4 
  • Coriander leaves....................2springs


STEPS:
  1. Cut the chicken into halves,(or whole legs)make slits over the chicken,wash well and pat dry.Then marinate with lemon juice,ginger juice and salt for 30 minutes.
  2. Grind vegetables,spices, one tbsp olive oil and salt to make a smooth paste (adjust the salt) then marinate again with this ground paste for at least 4 hours or over night.
  3. Fire the coal in the charcoal grill, allow to burn the coal until it covers white ash and the heat is spread all over, place well oiled grill rack over the coal, arrange marinated chicken over the rack.
  4. Cover with the lid, keep vents open, turn the chicken 3 to 4 times ( each time brush olive oil) until juices run clearly (approximately 30 to 45 minutes) make sure chicken is cooked well.
  5.  Al faham chicken is ready......!!!!!

For Baking/Roast in Oven

  1. If you use oven, pre heat oven at 250 degree C, arrange marinated chicken in a grill  rack and bake it for 15 minutes, then split over, apply olive oil and bake another 15 minutes, make sure it is not over cooked.
  2. After backing, change the oven setting to broil, then broil it 3 to 4 minutes, Transfer the baked chicken in to a glass bowl, fire a piece of coal in a small bowl and keep it inside the big bowl, add little olive oil over the burning coal, then cover the bowl with lid for 10 minutes.
  3. Al faham chicken is ready.......!!!!! Enjoy with hummus or mutabbal and Arabic bread.

  • Bay leaf..............................1no
  • Cinnamon stick.................1small

STEPS:

  1. Cut the chicken into small pieces,wash well drain it and keep aside.
  2. Marinate chicken with turmeric powder,pepper powder,ginger garlic paste,salt and garam masala keep it aside.
  3. Wash and soak rice for 20 minutes and drain off the water.
  4. Heat ghee(oil) in a pot add bay leaf,cloves,cardamom,cinnamon and star anise and fry few seconds.
  5. Then add sliced onion and green chilly saute until the onion is transparent.
  6. Now add marinated chicken pieces and fry them for couple of minutes.Then add yogurt,cilantro and chopped mint cook until the chicken is half cooked.
  7. Add 3cup of  water allow it to boil then add rice mix well (adjust salt) then reduce the flame,cover the pot with lid and cook until it is done.Once it is cooked,fluff up gently and serve warm.
  8. Enjoy delicious chicken pulao  with raita/salad.!!!!!!!!!!!!!!!!!!!!!!!!!.

Today I am sharing here a tasty,easy and yummy recipe,nei choru(ghee rice).This is my husband's  and children's favorite dish,ghee rice with mutton kuruma.

  • Khaima(jeerakasala)rice..2cup
  • Boiling  water.....................4cup
  • Onion...........................(cut into thin slice)
  • Ghee..............................3tbsps
  • Salt.................................to taste
  • Cinnamon stick..............1"piece
  • Cardamom pod...............4nos
  • Cloves (grambu).............3nos
  • Bay leave........................1no
  • Fennel seed......................1/4tsp
  • Sha jeera...........................1/4tsp

TO CRUSH:

  • Ginger.............................small piece
  • Garlic cloves...................2
  • Green chilly.....................2nos

FOR GARNISHING:

  • Onion.................................2small
  • Ghee or oil..........................for frying
  • Cashew nut..........................12nos
  • Raisins..................................10nos
  • Chopped cilantro...................2tbsp

STEPS:

  1. Wash the rice well and soak for 10 minutes then drain the water  and set aside.
  2. Crush above mentioned crush ingredients and keep aside.
  3. Heat  ghee or oil in a pan,fry the thinly sliced onion until light golden brown and transfer to  a paper towel then fry the  cashew and raisins separately, (in the same oil used for  onion fry)drain them and keep aside.
  4. In a thick bottom vessel  heat 3tbsps ghee  add all the whole spices saute for few seconds then add sliced onion and crushed ginger,garlic green chilly paste and saute until the onion become translucent.
  5. Now add rice and saute for 4 to 5 minutes(don't brown or over roast the rice).
  6. Then add boiling water  and salt mix well,check the taste of the water and adjust salt,cover the vessel with its lid and cook  on low flame for 20 minutes or  until the water has dried off.
  7. Open the lid,  gently fluff the rice with a fork. Garnish with fried nuts,onion and chopped cilantro,keep covered for few more minutes.
  8. Serve warm with mutton kuruma or any your favorite curry and papad.

NOTES:
  • You can use basmati rice instead of kaima rice.
  • The entire ghee rice recipe can be made in a pressure cooker.If cooking in a pressure cooker,adding by  31/2cup water and pressure cook for 3whistles.

Sadhya special palada pradhaman (sadhya recipe # 14)

Hi friends,
Today I am sharing here paalada pradhaman(payasam).This is a delicious dessert prepared using rice ada and milk.It is usually served in  kerala sadhya (grand feast) .its  taste is amazing.

     എല്ലാവർക്കും എന്ടെയും കുടുംബത്തിൻടെയും ബക്രീദ്, ഓണം        ആശംസകൾ!!!. 



 SUMMARY:

INGREDIENTS:

  • Rice ada(small ada.1/4cup(i use ready made ada which available in kerala grocery stores)
  • Full cream milk.....1ltr
  • Water......................3glass
  • Sugar......................1/2cup(as ur taste)
  • Cardamom powder.1/4tsp
  • Ghee.......................1tsp


STEPS:

  1. Wash and drain the ada ,keep aside.
  2. Boil  2glass  of water in a sauce pan  until it bubbling,switch off the flame and soak the washed ada in this hot water,cover the pan  and keep it aside for 20 minutes.
  3. Drain the ada and rinse 2to3 times under cold water thoroughly to remove all the excess stickiness out of it.Set aside in water until you add it to the payasam.
  4. Heat a thick bottom vessel add 1tsp ghee and water,once it  boil add milk, keep stirring when it  boils add sugar and continue boiling until it become thick.
  5. Now add ada into it ,stir and continue boiling until it thicken and its colour changes to pale pink.Add cardamom powder,mix well and remove from the fire.
  6. Tasty and yummy palada pradhaman is ready.
