INGREDIENTS:
- Bread crumbs....as needed
- Egg....................2nos
For filling:
- Chicken............250gms
- Chopped onion...2nos
- Green chilly.........2nos
- Chopped ginger....1tsp
- Chopped garlic.....1tsp
- Grated carrot.......1 small
- Curry leaves........2sprigs
- Chopped cilantro..2tbsp
- Chilly powder.......1/4tsp
- Turmeric powder...1/4tsp
- Garam masala........1/4tsp
- Salt......................to taste
For batter:
- Maida..................2cups
- Corn flour............2tsp
- Salt......................1pinch
- Egg .....................2nos
- Water...............as needed
STEPS:
- Clean and wash the chicken and cut into small pieces.
- Cook the chicken along with chilly powder,turmeric powder and salt, shred it and keep aside.
- Heat oil in a pan, add ginger, garlic,onion, green chilly, grated carrot, curry leaves,garam masala,salt and a pinch of turmeric powder, saute it until onion is light brown.
- Now add shredded chicken and cilantro, stir for couple of minutes, switch off the flame.
- Make a batter with above mentioned ingredients.
- Heat a non stick pan and pour a spoon of batter and spread evenly into a thin round pan cake, when it is done remove the pan cake and keep aside, repeat the same with the rest of the batter.
- Place each pan cake on a plate and keep the filling towards the side, fold both the sides equally up to spring rolls length, then roll it tightly and seal it.
- Take two egg whites with a pinch of salt and beat well.
- Dip each spring roll into the beaten egg whites and roll into bread crumbs.
- Deep fry the spring rolls until golden brown.
- Enjoy the spring roll with ketchup or sauces.
