Vazhudananga thoran(Brinjal stir fry)

This is a simple thoran.It can serve as side dish with rice and chapati.

  • Total time............15 minutes

INGREDIENTS:

  • Brinjal long .........500g
  • Green chilly..........2nos
  • Onion small..........2nos
  • Curry leaves ........2 sprigs
  • Mustard seeds .....1/4 tsp
  • Urad dal...............1/4tsp
  • Salt ......................to taste
  • Turmeric..............2 pinch
  • Chilly powder ....1/4tsp
  • Grated coconut....1/4cup
  • Coconut oil .........11/2tbsp

STEPS:

  1. Wash the brinjal and cut into cubes, keep aside.
  2. Heat oil in a pan, add mustard seed and urad dall, when it is crackle add onion,green chilly and Curry leaves, saute for two minutes.
  3. Then add brinjal,salt, turmeric and chilly powder,stir well, cover the pan with a lid, cook in low flame until it is done.
  4. Now add grated coconut and combine well, keep in Sim for a minute.
  5. Switch off the flame, serve with hot...!!!Please do feedback....
