- Brinjal long .........500g
- Green chilly..........2nos
- Onion small..........2nos
- Curry leaves ........2 sprigs
- Mustard seeds .....1/4 tsp
- Urad dal...............1/4tsp
- Salt ......................to taste
- Turmeric..............2 pinch
- Chilly powder ....1/4tsp
- Grated coconut....1/4cup
- Coconut oil .........11/2tbsp
STEPS:
- Wash the brinjal and cut into cubes, keep aside.
- Heat oil in a pan, add mustard seed and urad dall, when it is crackle add onion,green chilly and Curry leaves, saute for two minutes.
- Then add brinjal,salt, turmeric and chilly powder,stir well, cover the pan with a lid, cook in low flame until it is done.
- Now add grated coconut and combine well, keep in Sim for a minute.
- Switch off the flame, serve with hot...!!!Please do feedback....
