Malabar mutta roast (Egg roast)

INGREDIENTS:

  • Egg......................3nos
  • Onion...................4nos
  • Tomato.................1small
  • Chopped ginger.....1tsp
  • Chopped garlic......1tsp
  • Green chilly.......... 2nos
  • Curry leaves.........2sprigs
  • Oil.....................3 or 4tbsp
  • Coriander powder...1tbsp
  • Kashmir chilly powder..1tbsp
  • Garam masala.........1/4tsp
  • Thick coconut milk..1cup

STEPS:

  1. Hard boil the egg, remove the shell and keep aside.
  2. Heat oil in a pan, add ginger, garlic, green chilly, sliced onion and curry leaves, saute it for few minutes.
  3. When onion is golden brown add tomato and salt, stir well and close the pan with lid.
  4. When tomato is cooked well, smash it and add coriander powder, kashmir chilly powder and garam masala, then stir well until its row smells goes away.
  5. Now add coconut milk and combine it, switch off the flame before start to boil.
  6. Add boiled egg and sprinkle curry leaves......serve with appam, porata or string hoppers.
