Malabar Unnakaya (Stuffed plantain fry)

This is a popular malabar ifthar snack. It is one of our favorite snack, This snack is look like cotton pod, so it is called unnakaya, It is easy to prepare and taste is amazing.!!







SUMMARY:

  • Total time ...........25 minutes

INGREDIENTS:
  • Ripe plantain(nentra pazham).3nos
  • Oil .........................................for deep frying

FOR FILLING:
  • Egg .......................................2nos
  • Grated coconut ....................1/2 cup
  • Sugar ...................................5tbsp or as ur taste
  • Ghee or oil ..........................1tbsp
  • Cashew nut .........................12nos
  • Raisin ..................................12nos
  • cardamom powder ..............1/2 tsp

STEPS:
  1. Steam the  plantain (kerala  nentra pazham) with a steamer, peel and remove the seeds from the middle and smash it or grind it like chapati dough, Keep aside.
  2. Beat eggs lightly  with sugar, a pinch of salt and cardamom powder.
  3. Heat ghee in a pan add cashew and raisin,stir for few seconds until golden brown, then add grated coconut saute for few seconds, now add beaten eggs scrambled it and mix well .
  4. Grease your hands with a little ghee and make a lemon size balls out of the banana dough, flatten it to small round shape and place 1tbsp filling in the center, close edges, press lightly and roll it in your hand in to the elongated shape of cotton pod (shape of unnakaya)
  5. Then deep fry the unnakaya until golden brown.
  6. Serve with hot, Enjoy!!!!!!!!
