INGREDIENTS:
- Chicken ...................1kg
- Onion........................5nos thin slice
- Tomato......................3nos
- Green chilly...............8nos
- Ginger .......................a big piece
- Garlic .........................10nos
- Chopped cilantro.........1cup
- Chopped mint leaves...1/2cup
- Lemon juice.................1lemon
- Garam masala...............11/2tsp
- Turmeric powder...........1/2tsp
- Salt ...............................to taste
- Ghee or oil....................3tbsp
FOR GHEE RICE:
- Kaima rice......................4cup
- Hot water .............................6cup
- Cinnamon .....................1stick
- Cardamom pods ...........4nos
- Cloves............................3nos
- Fennel seeds...................1/4tsp
- Star anise(thakkolam).....1petal
- Ghee...............................4tbsp
FOR GARAM MASALA:
- Cinnamon .......................2small stick
- Cloves ............................1/4tsp

- Caraway seed/shahi jeera..1/4tsp

STEPS:
- Clean and cut the chicken into medium size pieces,wash well and drain,keep aside.
- Dry roast the spices one by one on low flame,let it cool and grind fine powder.garam masala is ready.
- Wash the rice,soak for 10minutes and drain completely,set aside.
- Heat ghee in a thick bottom vessel add whole spices stir few seconds,then add hot water and salt into it.Once it is boil add rice stir well then cover the vessel,when steam comes out reduce the flame and cook 10 to15minutes or until it is done.off the flame,fluff the cooked rice gently using a fork.
- Crush green chilly,ginger and garlic keep aside.
- Make chicken masala:Heat ghee in another vessel fry cashew and raisins separately, transfer these to a bowl we will be using these for garnishing.To the same vessel add thinly sliced onion in two batches and fry evenly until golden colour, transfer in to a plate.This is bista (fried onion).
- In the same ghee add chopped tomatoes stir few seconds,then add salt crushed green chilly,ginger and garlic stir and cover the pan, cook tomatoes become soft.
- Now add chicken lemon juice,half of chopped cilantro,mint leaves,garam masala and turmeric powder saute for 5 minutes.Then cover the vessel with lid and cook until chicken is almost done.
- Open the lid add bista(fried onion)stir and cook 3 to 4minutes. Then level the chicken properly,layer half of the rice and sprinkle garam masala,chopped cilantro,mint leaves ,fried onion,cashew and raisins.
- Layer the rice again,sprinkle cilantro,mint leaves,bista,cashew,raisin and little ghee.drizzle saffron milk on top of the rice.
- Cover the vessel with lid and seal the edges with atta/maida or aluminium foil.Heat a old tawa or griddle,when it turns very hot place this briyani pot over the tawa and cook for 10 to 12 minutes.Make sure the flame is medium.
- Switch off the flame leave it for 15minutes.Delicious chicken dum biriyani is ready!
- Serve warm with raita,papad and sweet pickle.Enjoy!!!!!!!!!!!!.
